Bamboo Rice Pal Payasa

The much awaited festival is here.  The first day of Navratri, which is Padya is celebrated tomorrow.  I am sharing this interesting and unique Bamboo Rice Milk Payasa recipe to start off the festival.  Wishing you all a very happy Navratri / Dushehra / Dasara.

Ingredients:
1 glass Bamboo Rice soaked for 12 hours
2 Glasses of Milk
1/2 or 3/4 glass of Sugar
1/4 tsp Elaichi/Cardamom Powder
Few Cashew nuts, Almonds, Pistachios roasted in Ghee

Method:
Soak Bamboo Rice for 12 hours.  Sieve and crush the Bamboo Rice in hand.  In a cooker, add the Bamboo Rice and 3 glasses of water.  Pressure cook for 3 to 4 whistles.  Open the lid and add more water if required.

Remove to a thick-bottomed pan and stir for 2 minutes.  Add Sugar and cook for 5 minutes stirring continuously.  Add Milk and cook until little thick.  Add Elaichi powder and mix.

Remove to a serving dish and add your choice of dry fruits.
