Sookha Bhindi – Okra Stir Fried with Spices

Sookha Bhindi

Sookha Bhindi is a dry side dish prepared using Ladies finger/Okra/Bhendekayi.

Ingredients:
4 Cups Chopped Bhindi/Okra pieces
2 tbsp Oil
1 tsp Mustard Seeds
½ tsp Turmeric Powder
2 tsp Jeera/Cumin Powder
2 tsp Dhania/Coriander Powder
2 tsp Aamchur/Dry Mango Powder
1½ tsp Chili Powder
Salt to taste

Method:
Heat Oil in a kadai and add Mustard Seeds and when they splutter, add Turmeric Powder. Now, add Bhindi and fry for 2 to 3 minutes. Add Aamchur powder and stir-fry. Add Jeera, Dhania, Chili powder and Salt and mix well.

Stir-fry for 2 more minutes and remove to a serving dish.

Serve Sookha Bhindi with Phulka or plain rice.
