Sev Ki Subzi – Potatoes Radish cooked with Sev

Sev Ki Bhaji

A very unique side dish prepared using Sev, which is a deep fried crispy snack.

Cuisine: Gujarat and Rajasthan
Time Required: 20 Minutes

Ingredients:
1 Radish / Mooli peeled and diced
2 Potatoes, peeled and diced
1 Onion, Chopped finely
2 Green Chilies, Chopped finely
1tbsp Oil
1tsp Chili Powder
1tsp Coriander Powder
1tsp Jeera / Cumin Powder
1 Cup Motha Sev / Deep Fried Indian Savory
3 – 4 tbsp Curds
½ tsp Turmeric Powder
Few sprigs of Coriander leaves, chopped finely
Salt to taste

Method:
Heat Oil in a pan, add Turmeric Powder and Onion and sauté for two minutes.

Add Radish, Potatoes, and Green Chilies and mix well.

Add 1 cup of water and cook until the vegetables are soft.

Add Salt, Chili Powder, Coriander Powder, Curds and cook for a minute.

Add Sev and mix well.

Remove to a serving dish and garnish with Coriander leaves.

Serve hot with your choice of Indian bread.
