Alugadde Rasa Palya – Potato Gravy – Alu Subzi – Aloo Bhaji

Alu Subzi

A side dish with gravy prepared using Potatoes. This side dish is very popular in South Karnataka.

Time Required: 25 Minutes

Ingredients:
4 Potatoes, Peeled and Chopped finely
1 tsp Chili Powder
1tbsp Coriander Powder
1tbsp Grated Jaggery
3 sprigs Coriander leaves, Chopped finely
Few Curry Leaves
2 Tomatoes, Chopped finely
2 Onions, Chopped finely
½ Cup grated fresh Coconut
2tbsp Oil
1tsp Mustard Seeds
½ tsp Turmeric Powder
Salt to taste
Method:
Heat Oil and add Mustard Seeds, and when they splutter, add Turmeric Powder, Curry Leaves, Onions and sauté for 2 minutes. Add Tomatoes and stir-fry. Add Potatoes, Coriander Powder, Chili Powder, Jaggery, Salt and 2 cups of water. Mix well.

Close the vessel and cook until Potatoes are soft. Add Coconut and Coriander leaves and mix well. Remove to a serving dish.

Serve hot with your choice of Indian Bread.
