Ajwain Alu – Ajwain Aloo Recipe – Potatoes with Carom Seeds

Potatoes cooked with Carom Seeds.  This recipe is from North India.

Time Required: 20 Minutes
Serves: 4

Ingredients:
12 Baby Potatoes, boiled, peeled and cut into two
1tbsp Oil
1tsp Cumin Seeds
2 tsp Ajwain / Carom Seeds
1 tsp Pepper Powder
1½ tsp Coriander Powder
½ tsp Amchoor (Dry Mango) Powder
2tbsp Coriander leaves, Chopped finely
Salt to taste

Method:
Heat Oil in a kadai/pan. Add the Cumin seeds and Ajwain. Reduce heat. Add the Salt, Pepper and Coriander powder. Mix in the Potato cubes. Cover and cook on low heat for 5 minutes. Uncover, add amchoor and cook for a further five minutes, turning the Potatoes gently with a wooden spatula.

Garnish with chopped Coriander. Serve with Phulka.
