Sakkare Achchu – Sugar Moulds

Sakkare Achchu

Different models of animals, flowers, plants and things are made using Sugar.  A thick sugar syrup is prepared and poured into different sugar molds.  In Karnataka Sakkare Achchu are distributed to relatives, friends and neighbors on Sankranthi festival along with Yellu, Plantain and Sugarcane piece.

Time Required: 20 Minutes
Makes: 4

Ingredients:
½ Cup Sugar
¼ Cup Milk
¼  Cup Water
A drop of food color

Method:
In a thick-bottomed pan add Sugar and water and let the Sugar melt.  Continue to cook until it starts to boil.  Now add half of the Milk and stir.  The Milk is added for taste as well as to remove the dirt from the Sugar.  The syrup will start to froth.

Sieve the syrup and pour the syrup back into the pan and boil again.

Add the remaining Milk and stir and sieve again.  Pour the syrup back in the pan and continue to boil until the mixture becomes thick and white.  Keep the molds ready and pour the mixture into the molds.

Using a knife trim the extra sugar over the mold.  Leave it aside for 10 minutes and remove gently from the molds.
