Jalebi – Jilebi Recipe

Jalebi

Jalebi is a sweet dish, which looks like a maze is prepared using flour, deep fried and dipped in sugar syrup.  It is also known as Zulbia, Jilapi, Mushabak, and Zalabia.

Time Required: 30 Minutes + fermentation time
Makes: 20

Ingredients:
1 Cup  Maida/Refined Flour
4 tsp Gram Flour/Besan
4 tsp Curd/Yoghurt
4 tsp Oil
A few drops of Rose Essence
A few drops of Orange Food Color/Jalebi Color
2 Cups Sugar
Few strands of Saffron
Oil for deep-frying

Method:
Mix Flour, Gram Flour, Curd, Oil, Rose Essence and Jalebi color. Add little water to it and mix to a thick batter. Set this aside for 24 hours to ferment.

In a vessel, add Sugar and enough water to cover the Sugar and bring it to a boil. Keep stirring to obtain Sugar syrup of one string consistency. Add Saffron to the syrup.

Heat Oil in a flat Kadai/Jalebi kadai and pour the Jalebi batter through a Coconut shell with one hole or through a cloth bag with a small hole in a circular shape with lines running all over to form a maze or a mesh. Fry till crisp (do not let them turn brown) and remove them and dip them in the Sugar syrup for sometime.  Remove them when they are steeped in Sugar syrup. Garnish with Pistachios and Saffron. 

Serve Jalebi hot or cold.  Jalebi is also served with Rabdi (condensed sweet milk).
