  1. Oil your hands before handling Chilies, to avoid hand burn.
  2. For easy peeling of Sambar onions / Shallots, soak them in water for 10 minutes.
  3. Before spreading the dosa batter rub the iron kadai (not the non-stick pan) with a halved onion. The Dosa will not stick to the pan.
