Sookha Aloo

A dry side dish prepared using Potatoes

Time Required: 20 Minutes
Serves: 4

Alu - Potatoes Fry
Ingredients:
500gms Potatoes
2tbsp Oil
½ tsp Mustard Seeds
½ tsp Turmeric Powder
1½ tsp Chili Powder
2 tsp Jeera/Cumin Powder
2 tsp Dhania/Coriander Powder
1 tsp Aamchur/Dry Mango Powder or Juice of half Lemon
Salt to taste

Method:
Peel Potatoes and cut into small pieces. Heat Oil in a kadai/pan and add Mustard Seeds, when they splutter add Turmeric powder. Add Potatoes and stir fry for 3 minutes. Now add Jeera, Dhania, Aamchur powder and mix well. Add Chili powder and salt and stir gently. Close the kadai and let it cook for a minute or two. Remove the lid and stir. Check if the Potatoes are cooked. Add Lemon juice and stir and remove to a serving dish and serve Sookha Aloo with Phulka or plain Rice or Rice and Dal/Tovve.
