Alasandekayi Masala is a side dish prepared using Yard Long Beans.
Time required: 20 Minutes
1 Bowl, Chopped Alasandekayi / Yard long beans
1 Tomato, Chopped finely
1 big Onion, Chopped finely
1 Potato, Peeled and diced
1tsp Jeera / Cumin Seeds
1 tsp Mustard Seeds
1/2 tsp Turmeric Powder
1 tsp Chili Ginger paste
2tbsp Kasoori Methi / Dried Fenugreek leaves
1/2 Cup Fresh Grated Coconut
1tsp Chaat Masala Powder
1tsp Roasted Jeera / Cumin Powder
1tsp Jaggery powder
Salt to taste
Heat Oil, add Mustard seeds, Jeera, and Turmeric powder.
Add Onion and Chili Ginger paste and saute for a minute.
Add Tomatoes and stir fry from two minutes.
Add Potatoes, Alasandekayi, and Kasoori Methi and one cup of water.
Mix well. Add Salt and close the vessel and cook until the vegetables are soft. Sprinkle Chaat Masala, Jeera Powder, and Jaggery.
Add Coconut and mix.
Serve Alasandekayi Masala with your choice of Indian Bread.
