Gongura Thokku

Gongura/Hibiscus cannabinus/Sorelle leaves is a kind of leaf related to roselle. These leaves can be preserved by preparing pickles/thokku/pachchadi. A hot favorite among natives of Andhra Pradesh.
Time Required: 15 minutes
Ingredients:
2 Bunches Gongura leaves
5 Green Chilies
1tsp Mustard Seeds
4tbsp Oil
Salt to taste
Method:
Clean Gongura leaves and wash thoroughly. Dry them on a cloth and grind them with Green Chilies and Salt. Remove to a bowl and keep aside for a day. Next day heat Oil and add Mustard Seeds. Let it cool. Now add this Oil to the thokku and store in air-tight jars. Better to store in the refrigerator.
Serve this thokku with hot rice and ghee.
