Poha is prepared in various ways across India, Mutter Poha is a specialty of Uttar Pradesh and Bihar.

Time required: 10 Minutes + Soaking time
2 Cups Thick Beaten Rice / Poha soaked
1 Cups Fresh Peas
Few sprigs of Corainder leaves, Chopped
5 – 6 Cashew nuts
Juice of 1 Lemon
1 tsp Pepper Powder
1 tsp Chili Powder
1 tsp Sugar
1 tsp grated Ginger
2 – 3 Green Chilies, minced
1 tsp Jeera / Cumin Seeds
A pinch of Hing / Asafoetida
2 tbsp Oil or Ghee / Clarified Butter
Salt to taste
Heat Oil and add Jeera and when they splutter, add Raisins, Hing, Ginger, Green Chilies, and Peas. Saute for a minute or two.
Add Cashew nuts and saute. Add Chili Powder and Pepper Powder and mix well. Cook until the Peas are soft.
Add Sugar, Salt, Poha, and Lemon Juice and mix well.
Add Coriander leaves and mix gently. Remove to a serving dish and serve hot.
