Paneer Bhurji

A side dish prepared using Cottage Cheese and vegetables.

Time Required: 20 Minutes
Serves: 4

Paneer Burji

Ingredients:
1½ Cup grated Paneer/Cottage Cheese
1½ Cup Tomatoes Chopped Finely
1 Onion, Chopped finely
1 Capsicum Chopped finely
1tbsp Chili – Ginger paste
2tbsp Coarsely ground Cashew nuts, Optional
1tsp Chili Powder
1tsp Garam Masala Powder
½ tsp Sugar
2tbsp Oil or Butter
Salt to taste

Method:
Heat Oil and add Chili-Ginger paste and sauté, now add Onions and Capsicum and mix well.  Add Tomatoes, and cook for 5 minutes.  Add Paneer, Chili Powder, Salt, Sugar and Cashew nuts.  Mix well and cook for 2 to 3 minutes.  Serve hot with Phulka or Paratha.

Crispy and tasty.

Time Required: 30 Minutes

Chinese Crispy Vegetables

Ingredients:
6 florets of Cauliflower
1 Carrot, Peeled and sliced into long pieces
4 Tender Beans, Broken into 3 pieces
4 Green Chilies, Slit into two pieces
Oil for deep frying

Chinese Crispy Vegetables

For the batter:
4 tbsp Corn flour
1tbsp Maida
1tbsp Rice flour
A pinch of cooking soda
Salt to taste

Sweet and Sour Cucumber Salad

I was in Delhi last Friday and my friend served this simple, yet delicious salad for dinner.  I re-created this recipe this Friday at home.

Cottage Cheese and Lettuce Salad

Time Required: 10 Minutes

Ingredients:
20 Paneer / Cottage Cheese Cubes
1 bunch Lettuce, Chopped or roughly torn
1/2 Yellow Pepper, Sliced
1 small Onion, Chopped finely
1 Big Red Chili, Sliced
1tsp Olive Oil
Juice of one Lemon
1tsp Crushed Pepper
Salt to taste

Method:
Toss all the ingredients together. Chill and serve.

Sihi Kumbalakayi Rasa Palya

Sweet pumpkin cooked in a gravy.  Perfect with Indian Bread.

Time Required: 20 Minutes
Sihi Kumbalakayi Rasa Palya

Ingredients:
2 Cups of diced Sihi Kumbalakayi / Pumpkin with or without skin
Salt to taste

For the seasoning:
1tbsp Oil
1/2 tsp Mustard Seeds
Few Curry leaves
1 Red Chili, Broken
A pinch of Hing / Asafoetida
A pinch of Turmeric Powder

For the Masala paste:
1tsp Oil
1/2 Cup grated fresh Coconut
3 – 5 Red Chilies
1″ piece Tamarind
1/4 tsp Methi / Fenugreek Seeds
1tsp Dhania / Coriander Seeds
1tbsp Uddina Bele / Urad Dal / Black Gram Split

Pindi Chana

This dish is straight from the kitchens of Rawalpindi, hence known as Pindi Chana.

Time Required: 30 Minutes + Soaking Time

Pindi Chana

Ingredients:
1 Cup Chana / Kadalekalu / Chikpeas
5tbsp Oil
1tsp Ajwain
2tbsp Besan / Gram Flour
1tsp Anaardana / Pomegranate Powder
2tsp Aamchur / Dry Mango Powder
1tsp Chili Powder
1tsp Black Salt
2tbsp Kasoori Methi / Dry Fenugreek Leaves
1tsp Cumin / Jeera Powder
4 Cardamom, Crushed
2 – 3 pieces Cinnamon
4 Cloves
1” Ginger, Julienned
Salt to taste

Method:
Soak the Chana for 4 to 5 hours. Cook until soft. Sieve and keep aside.

Whole Garam Masala

Whole Garam Masala is a combination of whole spices used to flavor many dishes like Vegetable Pulao, Biryani, Side Dishes, Mughlai dishes, and so on.

Ingredients:
Jeera / Cumin Seeds
Fennel Seeds / Saunf
Kali Mirch / Peppercorns
Elaichi / Small Green Cardamoms crushed
Moti Elaichi / Big Cardamoms
Laung / Lavang / Cloves
Dalchini / Cinnamon
Bay Leaves

The quantity of each of the ingredients varies according to taste. These ingredients are first dropped into hot Ghee or Oil to enhance the flavor of the spices to mingle with Vegetables or Rice.

Purple Cabbage and Cucumber Salad

Time Required: 10 Minutes

Red Cabbage and Cucumber Salad

Ingredients:
1 Cup Red/Purple Cabbage, Shredded
1 small Cucumber, Peeled and Chopped
2tbsp Roasted Pine nuts
1tbsp Mustard (fluid)
1tsp Olive Oil
1tsp Crushed Garlic
1tbsp Vinegar or Lemon Juice
½ tsp Chili Flakes
Salt to taste

Red Cabbage and Cucumber Salad

Method:
Whisk Olive Oil, Mustard, Garlic, Vinegar/Lemon Juice and Salt. Toss Red Cabbage, Cucumber and Chili flakes in a salad bowl. Add the dressing and Pine nuts and toss again. Chill and serve.

Baby Corn Tava Masala

Stir fried Baby Corn with spices.  A very easy and quick to make recipe.

Time Required: 15 Minutes

Ingredients:
8 Baby Corn, cut into medium sized pieces
2 Onions, Chopped finely
2 Tomatoes, Chopped finely
3 Green Chilies, Chopped finely
1” Ginger, Juliennes
½ tsp Cumin Seeds
½ tsp Coriander Seeds
½ tsp Garam Masala Powder
½ tsp Chili Powder
2tsp Oil
Oil for Deep frying
Salt to taste

Baby Corn Tava Masala

Method:
Heat Oil and deep fry the baby corn till brown or steam baby corn if you are calorie conscious.

Onion Garlic Chilies Coriander Chutney

Time Required: 20 Minutes

Onion Garlic Chilies Coriander Chutney

Ingredients:
1 Onion, Peeled and Diced
20 – 25 Cloves Garlic, Peeled
8 Green Chilies
1 bunch Coriander Leaves, Cleaned and Washed
4tbsp Oil
½ tsp Mustard Seeds
Salt to taste

Method:
Grind Onion, Cloves, Green Chilies, Coriander and Salt to a paste. Heat Oil in a pan and add Mustard Seeds and when they splutter add the paste and stir fry until the moisture evaporates and the Oil separates from the Chutney. Serve with plain Rice or Indian Bread.
