Kathal Ki Biryani

This exotic dish is prepared using Raw Jackfruit and Rice with spices.

Time Required: 1 hour

Kathal Ki Biryani

Ingredients:
2 Cups Rice
2 Cups Chopped Raw Jackfruit
4 Tomatoes, Chopped finely
3 Onions, Sliced
Whole Garam Masala
Oil for frying
1tsp Ginger Paste
1tsp Garlic Paste
1tsp Turmeric Powder
2tbsp Chili Powder
1tbsp Garam Masala powder
2 big spoons of Curds / Yoghurt
2tbsp Butter
Few sprigs of Mint, Chopped
Salt to taste

Method:
Soak rice for half an hour. Parboil Rice along with the whole garam masala and sieve.

Pundi Palya

This is a side dish very popular in North Karnataka. It is made using Sorrel leaves also known as Gongura.

Time Required: 20 Minutes

Ingredients:
1 big bunch Pundi Soppu / Gongura / Sorrel leaves
1 Cup Tuvar Dal
¼ Cup Akki Thari / Rice Rawa or Jolada Nuchchu / Broken Sorghum
6 Green Chilies
1tbsp Oil
1tsp Mustard Seeds
½ tsp Turmeric Powder
Salt to taste

Sattu Ki Paratha

Stuffed Indian bread prepared using roasted chik pea (channa) flour. This type of bread is very popular in Bihar.

Time Required: 30 Minutes

Ingredients:
2 Cups Sattu Ki Atta / Roasted Chik Pea Flour
Oil for Roasting
Salt to taste

For the Filling:
1 Onion, Chopped finely
4 Green Chilies, Chopped finely
4 Garlic cloves, Peeled and Chopped finely
1tsp Grated Ginger
1tsp Nigella Seeds / Black Cumin Seeds / Kalonji
2 sprigs Coriander, Chopped finely
2tbsp Pickle (only the oil and masala)
1tbsp Mustard Oil
Juice of ½ Lemon
