This dish is very easy to prepare and serve.
Cuisine: North Karnataka
Time required: 5 Minutes
Ingredients:
3 tbsp Menthedittu / Menthkoot
1tbsp Sweet Chutney or 1tsp Tamarind pulp + 1 tsp Jaggery + 1tsp Water
1tsp Oil
½ tsp Mustard Seeds
¼ tsp Hing / Asafoetida
½ tsp Turmeric Powder
Salt to taste
Method:
In a bowl mix Menthedittu, Sweet Chutney, and Salt. Heat Oil and add Mustard Seeds, and when they splutter add Hing and Turmeric Powder. Pour this seasoning over the Methedittu mix and mix well. Serve with plain Rice.

Cauliflower cooked with dry fenugreek leaves powder and other spices.
Time Required: 30 Minutes
Ingredients:
2 Cups of Cauliflower Florets
¼ Cup Kasoori Methi / Dry Fenugreek leaves
1 big Onion, Chopped finely
2 Tomatoes, Chopped finely
3 Green Chilies, Chopped Finely
1tsp Ginger-Garlic Paste
1 – 2tbsp Oil
Oil for deep-frying
½ tsp Mustard Seeds
1tsp Coriander Powder
¼ tsp Turmeric Powder
½ tsp Aamchur Powder
A pinch of Sugar
Salt to taste
Method:
Deep-fry Cauliflower florets and keep aside.

This dish is very popular in North Karnataka. The cucumber that is available there is very ideal to prepare this side dish. I bought the vegetable when I visited Hubli in Feb and here is the recipe.

Gojju can be prepared using many vegetables like Capsicum, Mango, Bhindi / Okra, Lemon, and this recipe is with small Gooseberries. Everyone would have eaten these small gooseberries dipped in chili-salt powder when in school. I did, almost everyday!

A side dish prepared using Egg Plants / Aubergine. This dish is from Andhra Pradesh.
Time Required: 40 Minutes
Ingredients:
5 Brinjals
Lemon sized Tamarind, soaked in water
1 big Onion, Chopped finely
1tbsp Jaggery
1tsp Chili Powder
1tsp Coriander Powder
1tsp Jeera / Cumin Powder
4tbsp Oil
1tsp Mustard Seeds
½ tsp Turmeric Powder
½ tsp Methi / Fenugreek Seeds
2 Bay leaves
4 Cloves
3 Whole Cardamoms
4 pieces of Cinnamon
Salt to taste
For the Masala paste:
½ Cup Fresh Grated Coconut
1” piece Ginger
7 Pods of Garlic
½ Cup Groundnuts / Peanuts, Roasted and Peeled
¼ Cup Yellu / Sesame Seeds, Roasted
4 sprigs of Coriander leaves
5 Green Chilies

A side dish prepared using Gram flour, also known as Pitle. Popular in North Karnataka and Maharashtra.
Time Required: 20 Minutes
Serves: 4
Ingredients:
1 1/2 Cups Gram Flour/Besan
1 Onion, Chopped finely
2 Green Chilies, Chopped finely
1 tsp Red Chili Powder
1tbsp Oil
1/2 tsp Mustard Seeds
1/2 tsp Jeera/Cumin Seeds
A pinch of Turmeric Powder
Few Curry Leaves
1tbsp Coriander Leaves
Salt to taste
Method:
Heat Oil in a Kadai/Pan and add Mustard Seeds, when they start to splutter add Jeera/Cumin Seeds, Turmeric Powder and Curry Leaves. Next, add Onions and Green Chilies and fry for a minute. Add 3 Cups of water and Salt and let it come to a boil. Now slowly add the Gram Flour. Keep stirring. It does not matter if lumps are formed. Cook for 2 to 3 minutes or until the Gram Flour is cooked. If the mixture becomes too very thick, more water can be added.

A side dish prepared using Bitter Gourd.
Time Required: 20 Minutes
Ingredients:
1 Cup Hagalkayi / Bitter gourd pieces
5 Green Chilies
½ tsp Turmeric Powder
A gooseberry sized Tamarind
1tbsp Jaggery
Salt to taste
For the seasoning:
1tbsp Oil
1tsp Uddinabele / Black Gram Split
½ tsp Mustard Seeds
Few Curry leaves
Method:
Boil together Hagalkayi, Green Chilies, Turmeric Powder, and Salt until the vegetable is soft. Let it cool. Drain the water. Grind the cooked Hagalkayi with Tamarind to a paste. You can add two tbsp. water while grinding. Remove the paste to a kadai / pan and cook on low flame.
