Pudina Tomato Chutney

Chutney prepared using Mint leaves and Tomato

Time Required: 10 Minutes

Ingredients:
2 bunches Pudina Ki Patte/Mint leaves
1 Tomato
1″ Ginger
5 – 6 Green Chilies
1” piece Tamarind
Salt to taste

Method:
Clean and wash Mint leaves thoroughly. Grind all the ingredients together to a paste and serve with Paratha or Phulka.

Paneer Pudina Pulao

Mint flavored Rice with Cottage Cheese.

Time Required: 25 Minutes
Serves: 2

Pudina Paneer Pulao

Ingredients:
1 Cup Raw Rice
2 Cups Coconut Milk
1 Cup Pudina/Mint Leaves, Chopped
½ Cup Paneer/Cottage Cheese Cubes
3 Green Chilies
1″ piece Ginger
4 pods Garlic
1 Onion, Sliced
2tbsp Ghee
3 pieces Cinnamon
3 pieces Clove
2 Elaichi/Cardamom

Method:
Shallow fry Paneer and keep aside.

Mint Chutney

Time Required: 10 Minutes

Ingredients:
1 Bunch Mint (Pudina) Leaves
A small bunch Coriander Leaves
5 Green Chilies
1tbsp Lemon Juice
Salt to taste

Method:
Clean and wash the leaves. Spread the leaves over a cloth and pat dry.  Grind everything together to a paste and store in airtight containers. Can store for more than 2 weeks in the refrigerator.

This chutney is used to prepare Pani/water for Pani Puri, in Bombay Sandwiches and also served as an accompaniment with Samosa, Cutlet and Alu Patties.
