Raw Jackfruit Dosa

Crepes prepared using Raw Jackfruit.  This dish is known as Halasinakayi Dose in Kannada.

2 Cups Upittu Rava / Semolina
1 Cup Sabudana
2 – 3 Cups of Curds / Yoghurt
1 Cup Grated Coconut

Few Curry Leaves, Chopped finely
2 Green Chilies, Chopped finely
1 tbsp Oil
1 tsp Mustard Seeds

Balekayi Dose

Crepes prepared using Raw Banana.

Time Required: 20 Minutes + Soaking Time

Raw Banana Dosa

Ingredients:
1 Cup Raw Rice
2 Raw Banana
2 Green Chilies, Chopped finely
1 Onion, Chopped finely
4 Sprigs Coriander leaves, Chopped finely
Oil for Roasting
Salt to taste

Dosa Recipe

Method:
Soak Rice for 4 hours. Peel the Banana and dice them. Grind Rice, Banana and Salt to a batter. Add Green Chilies, Onion, Coriander Leaves and mix well.

Halasinahannina (Jackfruit) Dosa

Pancakes/Crepes prepared using Jackfruit.  This recipe reminds of the Kannada version of the song “The bear went up the mountain”, which goes like this “Karadi bettakke hoyithu…..nota nodalu…….halasu thandithu Jenu kalasithu….” Meaning of this song is -the bear went up the hill and got some jackfruit and mixed with honey and ate it and fed the cubs too.  How in the world did the bear know that it is such a delicious combination!!!?  Anyway…relish this dosa with honey and hum along the song.

Ragi Idli

Steamed cakes prepared using Semolina and finger millet. An ideal and filling breakfast.

Time Required: 40 Minutes
Serves: 4

Ragi Idli

Ingredients:
2 Cups Rawa/Semolina
2 Cups Ragi / Finger Millet flour / Nachni
4 Cups Curds
A pinch of cooking Soda
1tbsp Oil
1tsp Mustard Seeds
Few Curry Leaves
1tbsp Kadalebele/Bengal Gram
Salt to taste

Method:
Heat Oil and add Mustard Seeds and Bengal Gram. When Mustard seeds starts to splutter and Bengal Gram turns pink add Curry leaves. Remove from heat and keep aside. In a mixing bowl mix Rawa, Ragi flour, Curds, Salt and Soda. Add the seasoning and mix well. Leave it aside for 20 minutes. If the mixture is very thick add ½ cup water.

Potato Dosa

Pancakes prepared using Potatoes

Time Required: 30 Minutes

Ingredients:
4 Big Potatoes, Boiled and Grated
1 Cup Maida
4 Green Chilies
2tbsp Coriander Leaves, Chopped
Oil for roasting
Salt to taste

Method:
Peel and grate Potatoes. Add Maida, Salt and water to the Potatoes to make a soft batter. The consistency must be like that of Pakora batter. Add chopped Green Chilies and Coriander leaves and mix well.

Heat a Tava and grease it with Oil. Pour a spoonful of the Potato batter and spread it like a dosa. Sprinkle a tsp of Oil and roast it on both sides till they turn brown.

Kumbalakayi Dose

Ash Pumpkin pancakes / crepe.

Time Required: 20 Minutes + Soaking and Fermenting time

Kumabalakayi Dosa

Ingredients:
2 Cups Rice
1 Cup Chopped Kumbalakayi / Ash Pumpkin
Oil for roasting
Salt to taste

Method:
Soak Rice for four hours. Grind along with Kumbalakayi and leave it aside for 5 hours. Add Salt and mix well.

Kumbalakayi Dosa
Heat a dosa pan and pour a ladleful of batter and spread it thin. Sprinkle some Oil and roast on both sides. Serve with your choice of chutney.

Avarekalu Dose

Dosa prepared with South Karnataka’s favorite winter flat beans!

Time Required: 20 Minutes + time to prepare dosa batter

3 Cups Dosa Batter
1 Cup boiled Avarekalu
1 Green Chili, Chopped finely
Few sprigs of Coriander, Chopped finely
Few Curry leaves, Chopped finely
1 tbsp Chutney Powder
Oil for roasting
Salt to taste

Also known as Puda in Gujrathi, this is healthy and tasty dish prepared using Gram flour.

Time Required: 20 Minutes

Besan Chila Recipe

Ingredients:
2 Cups Gram Flour
1 Tomato
1 Onion or ½ Cup chopped Spring Onion (leaves and bulb)
¼ Cup Chopped Coriander Leaves
2 tsp Chili Powder
1tsp Jeera Powder
1tsp Olive oil or any other vegetable refined oil
Salt to taste
