Garam Masala Powder

This masala powder is used in most of the North Indian dishes. It gives a sharp flavour and taste.

Time Required: 10 Minutes

Ingredients:
½ Cup Jeera/Cumin Seeds
2tbsp Coriander Seeds
1tbsp Cloves
4 – 5 pieces of Cinnamon
5 – 6 Small Green Cardamom
10 – 12 Big Cardamom
2tbsp Black Pepper
1 Piece Mace/Jaivitri
1 Piece Nutmeg /Jaiphal/Jakayi
2 – 3 Bay Leaves

Method:
Warm all the ingredients together and grind to a powder and sieve. Store in dry airtight jars.

Masala Chai

Tea prepared using spices. A favorite drink among Indians and the only place on this earth where tea is literally cooked.

Time Required: 10 Minutes
Serves: 4
Masala Tea
Ingredients:
4 tsp Tea Powder/Leaves
1 piece of Dry Ginger, Crushed
3 Cardamom pods, Crushed
3 Cloves
1/2tsp of Saunf/Aniseed, Crushed
1 piece of Cinnamon stick
3 Cups Water
1 1/2 Cups Milk
5 tsp Sugar

Method:
Boil water in a saucepan with Ginger, Aniseed, Cinnamon and Cardamom. Add Tea Powder/leaves and let it brew for a minute. Remove from heat, and then let steep at room temperature for another minute. Sieve and add Sugar and Milk. Pour into cups and serve hot.

Kashmiri Chai

Tea prepared using Almonds, Cinnamon, Saffron and Cardamom. This concoction is very popular in the beautiful state of Kashmir, India.
