Mavinakayi Thokku

Chutney prepared using Raw Mangoes. This can be preserved for a long time.

Mango Thokku

Ingredients:
2 Big Raw Mangoes
2 – 4 tbsp Chili Powder
1tsp Fenugreek Seeds
¼ tsp Hing / Asafoetida
1tsp Turmeric Powder
6 – 8 tbsp Oil
1tsp Mustard Seeds
6tbsp Salt

Method:
Wash and dry Mangoes. Chop into big pieces and add Salt and store in a dry jar for a week.

Nimbehannina Thokku

Chutney prepared using Lemons. This can be stored for a longer period.

Lemon Thokku

Ingredients:
10 Lemons
1tsp Hing / Asafoetida
10 – 15 Green Chilies
1tsp Roasted and Powdered Menthya / Methi / Fenugreek seeds
4tbsp Salt

To Serve:
½ Cup Thokku
¼ Cup Coconut, Grated or ½ Cup Curds/Yoghurt

For the Seasoning:
2tsp Oil
1tsp Mustard Seeds
½ tsp Turmeric Powder

Gongura/Hibiscus cannabinus/Sorelle leaves is a kind of leaf related to roselle. These leaves can be preserved by preparing pickles/thokku/pachchadi.  A hot favorite among natives of Andhra Pradesh.

A chutney prepared using Indian Gooseberries, which can be stored for a long time.

Indian Gooseberry Thokku

Ingredients:
30 Indian Gooseberries
3/4 Cup Salt
2 tsp Oil
1tsp Asafoetida
4tsp Fenugreek Seeds
20 Green Chilies

To Serve:
½ Cup Thokku
¼ Cup Coconut, Grated or ½ Cup Curds/Yoghurt

For the Seasoning:
2tsp Oil
1tsp Mustard Seeds
½ tsp Turmeric Powder

Ranjaka

Chutney prepared using fresh Red Chilies.  This chutney can be stored for more than a year.

Time Required: 15 Minutes

Ingredients:
20 Fresh Red Chilies
1tsp Fried and Powdered Methi (Fenugreek) Seeds
Salt to taste

Method:
Grind all the ingredients together to a smooth paste. Preserve in airtight glass jars. This chutney can be preserved for more than 6 months and lasts longer if stored in the refrigerator.
