Ingredients:
6 Slices of Bread
1 Bunch Spinach
1 Cup Sweet Corn
1/2 Capsicum, Chopped (Optional)
½ Cup Grated Cheese
Chili Flakes to taste
3 Pods Garlic, Chopped (Optional)
1tsp Oil
Salt to taste
Method:
Wash and chop Spinach. Steam Corn and keep aside. Heat Oil add Garlic, Corn and Spinach and toss. Remove from heat and add Salt and Chili flakes and mix well.
Ingredients:
Wheat Bread or White Bread Slices
Few thin slices of Paneer/Cottage Cheese
½ Cup Pudina/Mint Chutney
Few Tomato Slices
Few Cucumber roundels
Few Onion rings
Method: Remove the edges of the bread slices. Apply a thin layer of Pudina chutney on two slices of bread. Arrange Tomatoes, Cucumber, Onion and Paneer slices over the chutney. Close with the other bread slice. Serve with Tomato Kethup.

1 tin Baked Beans
1 Onion, Chopped finely
1tbsp Chopped Coriander Leaves, Optional
2 Garlic Pods
1 Green Chilies
½ tsp Chili Powder
1tbsp Butter/Olive Oil

Method:
In a pan heat Butter/Olive Oil and add Onions and Garlic and sauté. Add Green Chilies and Baked Beans mix well and cook for 2 minutes. Toast Bread. On each toast spread a layer of Beans and garnish with Onion rings, Capsicum and Coriander leaves and serve
Method:
Heat Butter and add Garlic and sauté for a minute or two. Spread a spoonful of this over each of the bread slice. Toast in a preheated oven or on a tava/griddle for 3 minutes. Serve hot with your choice of soup.
Variation: Add some grated cheese over each of the bread slice after spreading the garlic mixture and then toast until the cheese melts.

½ Cup grated Mozzarella Cheese

1tbsp Mint Chutney
1tbsp Mustard
1tbsp Tomato Ketchup
Few Cucumbers and Tomato Roundels
Few Lettuce leaves
One Potato boiled and cut into Roundels
Salt and Pepper to taste
1 Cheese Slice or Grated Cheese
Shredded Cabbage and Beetroot for garnishing
Method:
Bread slices can be lightly toasted or used as it is. Spread Butter and Mint chutney on two Bread slices, on the other spread Mustard on one side and Tomato ketchup on the other. On the Bread and Mint chutney spread bread slice arrange Lettuce leaves and over it arrange Tomato, Potato and Cucumber roundels, sprinkle Salt and Pepper. Over this place the Mustard/Ketchup Bread slice and over this place the Cheese slice and arrange Lettuce leaves over it and sprinkle Salt and Pepper. Cover this with another Butter/Mint slice, the Butter/Mint facing down. Press the sandwich and cut the brown edges and cut into desired shapes. Arrange the sandwich in a serving plate and garnish with Cabbage and Beetroot shreds.

Method:
In a bowl mix all the ingredients. On a slice of Bread, spread the mixture and place another slice of Bread over it. Keep this in a griller and grill for 5 minutes. Remove cut the sandwiches and serve with Tomato Ketchup.
Grilled Sandwich with spicy mashed Potato filling.

Ingredients:
8 Plain Bread slices
Butter
4 Potatoes
1 Cup Peas, Shelled and boiled
1 Onion, Chopped
4 Green Chilies, Chopped
1tbsp Coriander Leaves, Chopped
Few Curry Leaves, Chopped
1tbsp Lemon Juice
1/2 Cup Fresh Grated Coconut
1 Cup Gram Flour
A pinch of cooking Soda
1/2tsp Chili Powder
1tbsp Oil
1tsp Mustard Seeds
1/2tsp Turmeric Powder
Salt to taste
Method:
Boil and peel Potatoes. Mash them and keep it aside. Heat Oil and add Mustard Seeds and when they start to splutter add Turmeric Powder, Green Chilies, Curry Leaves and Onion. Fry until the Onions turn translucent. Add mashed Potatoes, Peas, Salt, Coriander Leaves and Lemon Juice and mix well.
Apply butter on one side to all the Bread slices. Now, on the unbuttered side of the bread,spread a thick layer of the Potato mixture and keep another slice of bread over it. (Note: the buttered side of both the Bread slices should be facing outside). Keep this sandwich in the pre-heated sandwich maker and remove after 5 minutes. Remove and serve with Chutney and Tomato Ketchup.
