Red Pepper Soup
Charred Red Pepper is pureed along with Tomatoes to churn a delicious soup. Perfect for a rainy and cold evening.
Time Required: 20 Minutes
Serves: 4
Ingredients:
1 Red Pepper
4 Tomatoes
1 Onion, Chopped into big pieces
3 Pods Garlic, Peeled
1tsp Basil
1tbsp Olive Oil/Butter
1tsp Sugar
Parsley for garnishing
Salt to taste
Method:
Roast/Char Red Pepper directly on flame or in oven. Peel and remove the seeds. Blanch whole Tomatoes and peel. Heat Oil/Butter and add Onions and Garlic and sauté until Onions are translucent. Blend Onion, Garlic, Red Pepper and Tomatoes to a fine paste. Remove to a pan and add 2 cups of water, Basil, Sugar and Salt and let it boil for 2 to 3 minutes. Serve hot garnished with Parsley.
